YUMMY APPLE CRISP

Microwave Convection Cooking www.MicrowaveConnect.com

Here is a delicious recipe for apple crisp that cooks perfectly with the combination setting. There is a super simple and very good recipe in "Easy Microwave-Convection Cooking", but you may also enjoy the slightly saucy apples in this combination.

YUMMY APPLE CRISP

Topping:

1/2 cup flour
1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
4 tablespoons butter

Filling

6 cups peeled and sliced cooking apples
1 tablespoon flour
3 tablespoons milk
1/2 teaspoon vanilla
1/4 cup brown sugar

1. Combine all Topping ingredients in microwave-safe bowl. MICROWAVE (100%) 45 to 60 seconds or until butter is softened. Stir with fork until crumbly; set aside.

2. Preheat oven to 375 degrees. Combine all filling ingredients in 10.5-inch deep round silicone baking dish or 9-inch square silicone baking dish. Mix lightly. Sprinkle with Topping.

3. COMBO-BAKE with 10% microwave and 375 degrees (Low-Mix) for 20 to 25 minutes or until apples are tender. Serve warm plain or with ice cream.

TIPS  >With the square baking dish, it may be necessary in some oven to turn off the turntable and rotate the dish once after about 15 minutes.

>If your oven only has one combination, cook with this setting (usually Roast) for about 15 minutes. If additional browning is necessary, continue with convection on 375 degrees for about 10 minutes.

>To reheat and maintain the crisp topping, use the combination setting for about 10 minutes.

From my Kitchen..

—I recently prepared a double recipe of the Crustless Quiche recipe in the 9inch square pan. Even with the turntable turned off, it cooked nicely on the Low-Mix combination, rotating the dish once. The Egg Bake, cut nicely with the narrow silicone spatula and removed from the dish easily with the wide spatula. A 13x9-inch pan of caramel rolls were prepared in the deep 10.5-inch silicone pan and it baked perfectly on the convection setting. Most things that cook in a 13x9-inch pan can be cooked in the deep round silicone pan and then it turns freely in the ovens with turntables.

—At a recent class, several participants were getting together one evening for dinner and they were each making something from one of the microwave-convection cook books that they had just purchased. I was not there long enough to hear about their results, but thought what a good way to learn together and share cooking experiences.Soups and casseroles are great for winter dining. Make extras and freeze in meal-sized quantities for enjoying at another meal.
